I am sure I am just missing this, but I have looked everywhere I can think of and can't figure out how to edit the tags on a case.

Depending upon how you have FogBugz configured, you may not see the tag field.
You need to tell FogBugz to display it. Expand the box labeled "Add Fields" and click on "Tags".
The tag field is now visible, and you can add your tags. While you're at it, you might want to make display of the tag field permanent. Hover you mouse over the upper right corner of the tag box, click on the little square that appears to display the context menu, then check "Always show 'Tags'".
