We need the URLTrigger to send a GET request that includes the customer's email address to our stats package (Performable). We have it working using the {EmailFrom} variable, but that will pass along "Customer Name " rather than simply "customer@domain.com".

Is there a way to amend that? Another variable we can use?

We're On Demand so can't make changes to the plugin ourselves.

Sorry, I think you're going to have to send it through an intermediary script that runs a regex on the email address. I'll file a feature request to add a regex find and replace to any URL trigger.
