Is it possible to archive Projects in FogBugz?

Yes. You simply delete a project and you will no longer be able to open new cases against it. It will no longer appear in the list of projects to which a new case may be assigned. You'll still have access to all the project's history via search and/or filters, and you can resurrect a deleted project by simply undeleting it.

It's not exactly packed up, compressed and thrown into the bit-basement, if that's what you're looking for, but it's effectively out of your way.
