...I'd like to be able to set a long-standing case as not being under the beady eye of EBS, how can I do that?

There are 1 ways to do this. 1 right way that is not, unfortuantely, always available, and another less ideal, but still functional, way:

  1. From the "My Estimation History" report, there is a "Discard" option next to the list. I think this list only shows the best and worst estimates, but it is a start.
  2. Also, since EBS only tracks cases that have been closed, you can also re-open a case to get it out of EBS, and move it to a "deleted" project or something to keep it out of the filter.

if a case isn't in the worst estimates list, you can still remove it this way: fogbugz.stackexchange.com/questions/1071/… – adambox Mar 8 2010 at 16:35

If you need to remove the case from your estimation history, You can remove it even if it's not in your "worst estimates" list. See this question.
